Hola my friends! The Hive is certainly alive and buzzing with activity!
Where do I begin….
Our witnesses have certainly been busy bees! The Hive was born!
The Birds have been absent for a while but we’ve been watching from our nest! It’s been quite an interesting ride hasn’t it? I’m so proud and thankful for our witnesses. Being married to a network manager and developer, I know only too well the blood, sweat and tears it takes to accomplish what our witness have done. They worked so hard to protect our community, the meetings, negotiations and I’m sure very late nights preparing for the hard fork. Everything seemed to go off without a hitch! Such a blessing!
The Bird family is on the move…
Our youngest daughter and her family will be moving to South Carolina! This is so exciting for us. We’ll be able to drive to visit them. Needless to say we are thrilled. They’ll arrive tomorrow and oh the adventures we will have. We’re certainly thanking our lucky stars!
Coronavirus and family time…
The coronavirus has many of under lockdown! I know many of us across the world are enjoying family time right now! School has been dismissed for many and some schools will be closed until fall. Trying to keep kids both big and small stimulated can be tough. Some of our best times as a family have been found in the kitchen! Does it have to be complicated? No! Will it be messy? Yes! But will they learn anything? Yes! The memories you will make will last a life time!

Of course we’re making chocolate! Lol I’m sure you’ve missed my chocolate treats. Using just 4 ingredients we will make little chocolate delights your family will love!
Strawberry Cream Cheese Bites
- Kite Hill Cream Cheese (1/2 cup)
- Fresh Strawberries (3/4 cup)
- Vanilla (1 tsp)
- Dark Chocolate Chips (1/2 cup)
Grab those measuring cups…
Along with the fresh strawberries! Any fruit will work, blueberries, blackberries, bananas; it’s all good!
Take a little time…
to show the little ones how to scoop and measure! Counting and measuring, washing and chopping the strawberries while taking time to taste just a few! Blend everything in your favorite blender until it smooth.
Not to forget...
the chocolate! Carefully melt the chocolate using a double boiler or microwave. Grab your favorite silicone molds and spoon the chocolate into the mold. Don’t have molds? That’s okay! Ice cube trays, paper, muffin tins will work too. Refrigerate or freeze until the chocolate is solid.
Filled with cream…
they were back into the freezer for about 30 minutes. Finally topped with a chocolate seal they were back into the freezer, ready for family!
Back to those lucky stars…
With chocolate left over I decided to make bite size treats for the little guy. We’re so lucky to have them with us for the next month or so. He does love his chocolate, lol. With a smile on my face I poured the remaining chocolate, raisins and goji berries into my silicone mold. (Yep,this Bird is messy!) In short order they joined the strawberry bites in the freezer.
It’s so simple!
Making quick and easy treats with your family will be fun as well as healthy! Some of my fondest memories spent with my grandmother were in the kitchen. She taught me so much! I certainly didn’t realize it at the time but now looking back it was priceless!
