Some foods we can prepare very well and easily; others just do not always turn out as we expected. This happens to me yesterday when I tried to replicate my Aunt Zulay’s recipe for the most delicious pancakes I have tried. When I left my country some months ago, before I settled in Brazil, I stopped at Antofagasta, Chile to meet with my aunt, who had migrated with her husband some years ago. We spent less than a week, but it was a great time we had. My aunt is an English teacher but circumstances turned her also into an entrepreneur and she is building her own business preparing desserts (cakes, quesillos, and many other treats). You can follow her on Instagram here. Everything she prepares looks and tastes just great. One of the things I loved while I stayed with her was her pancakes.
How to prepare the Pancakes.
There are many recipes for pancakes. This is one my aunt Zulay put together:
Ingredients:
3 eggs
2 spoons of sugar
5mg of salt
110 gm of Greek yogurt (she uses coconut)
½ a spoon of vanilla.
A pinch of cinnamon.
½ a spoon of baking powder
Wheat flour (you’ll see how much in the preparation below).
Preparation:
Put all the ingredients, except the flour, in a blender.
Turn it on and blend for one minute. One tea spoon at the time, add the flour until the mix thickens and the whirlpool closes in.
Preheat a pan with some drops of oil. Cook your pancakes as big and thick as you want over low heat.
