I'd like to invite you to join me for an immune boosting cup of Rooibos (Red Bush) tea and scrumptious Rooibos Date Muffins and forget about the horrors of Covid19 for just a little while.
Nature provides many plants with powerful healing properties and Rooibos is a prime example.
This tea has a unique flavour and has many health benefits plus will help boost your immune system, something we all need right now!
Rooibos tea is derived from the indigenous South African Rooibos plant (Aspalathus linearis) and was first discovered in the Cederberg region, north of Cape Town, about 300 years ago!

Today this tea is exported to many part of the world and is used in medicinal and beauty products as well.
Rooibos is filled with amazing healing properties, and these are just some of them:
- Rooibos contains the antioxidants Aspalathin & Nothofagin with anti-inflammatory properties which helps prevent cardiovascular disease.
- The antiviral properties boost the immune system.
- Aspalathin has a hypoglycemic effect which helps balance blood sugar and improves insulin resistance.
- As it is a bronchodilator, it assists with Asthma.
- Its antispasmodic properties helps relieve the symptoms of IBS.
- It is a caffeine free, calming drink that aids in a good night's sleep.
This particular brand 'OuHuis' is infused with Ginger, and is sustainably cultivated and processed on the farm Zeekoevlei in the Clanwilliam district.
This tea grower supports the Right Rooibos sustainability initiative, protecting biodiversity on the farm and provide employment in invasive plant clearing and wetlands rehabilitating programs.

As we currently are in a 21 day lockdown, we can only go out to buy essential foods and medicine so I’ve been doing a lot of decluttering and spring cleaning and found some treasures along the way; a stash of lovely Dates and Sunflower Seeds, perfect for Date Muffins which I will share as my contribution to 's Fruits & Veggies Monday.

ROOIBOS DATE MUFFINS
- 1 cup Dates
- 1 cup warm Rooibos Tea
- 1 tsp Baking Soda
- 3 Tablespoons fresh Lemon Juice
- 1/2 cup Oil
- 3/4 cup Treacle Sugar
- 2 cups Stone ground Cake Wheat Flour
- 1 tsp Baking Powder
- Sunflower Seeds
Place dates in a deep mixing bowl, add tea and baking soda and stir, leave to soak about an hour.
Add lemon juice and oil and mix.
Add dry ingredients, mix well and spoon into sprayed muffin pans.
Top with Sunflower Seeds.
Bake at 180C for about 20 min
We recently visited the fruit growing region of the Overberg and found a delightful berry farm where they produce fragrant berry & herb liqueurs, jams and many other preserves. They do not use any preservatives, had lovely diabetic friendly jams and also use less sugar in their other preserves and jams.
The Green Fig preserve was the perfect accompaniment with the Rooibos Date Muffins which we enjoyed with a cup of Rooibos tea.

We all know by now what we need to do to protect ourselves and our loved ones, so please adhere to all those precautions, this virus is like no other our world has seen, but there's no need to panic!
