Pumpkin in Coconut Milk
As the season transitions into summer, the weather keeps getting hotter and hotter. Rain comes in regularly to cool the air from time to time, which is a welcome occurrence. Lockdowns have not been imposed but stricter adherence to the health protocols has been implemented. Health is as important now as ever before.
For today's dish, I want to share with you a pumpkin dish (kalabasa here in the Philippines). It is one of my favorite dishes of all time because of the creamy sauce and flavors of the vegetables. My wife cooked the dish but I still want to serve it on the platform for all to enjoy.
The ingredients include Pumpkin, tomato, tofu, pechay, green peas, button mushroom, coconut milk and seasoned with salt and pepper, cayenne, paprika, turmeric, and mushroom seasoning.
HOW
The process starts with frying the tofu and setting it aside. Then saute the tomato, pumpkin, button mushroom, green peas, and pechay, in that order. The seasoning was added in small quantities during this process and adjusted slowly. Water was added after a few minutes and a few tablespoons of coconut milk was added also. This made the flavors bind together.
The remaining coconut milk from the tetra pack was added when the pumpkin started to soften and covered for a few minutes. The fire was kept at the low to medium setting to keep it from burning the dish. Gently stir occasionally and check if the veggies have cooked already.

Adjust according to your taste and serve immediately. My wife added curry powder, which completely changed the flavor profile of the dish but it was completely worth it. It stepped up the dish and gave it that punch, bringing out the depth of flavor and aroma.
To serve, I put in steamed rice in a bowl and topped it with the #vegan pumpkin dish. This is one of the best pumpkin dishes I've had since the pandemic started and I am really impressed by the quality and layers of taste and flavors.
FINALLY
Having an abundance of coconuts in our country is a blessing. It is accessible, affordable, and readily available in the market and grocery stores. I personally prefer the #cocomama brand when I don't buy fresh. It can be stored in the refrigerator for a long time and the taste really captures the fresh coconuts one can buy in the market. This versatile and nutritious tree is awesome and the farmers should be well rewarded for the care and efforts they give in providing us the best coconut products in the world.
