While I've never made sourdough, I have experience in making bread. My children all say that I spoiled them as nothing will ever measure up.
I milled my own wheat, so I knew the flour was good and fresh. My family doesn't like a heavy bread (I do, but they don't), so I used a lighter wheat that made the bread texture almost like white bread.
You are correct in the type of flour. Yours looks like a heavy wheat, so it won't rise as much and won't be as fluffy. But, the taste is what matters the most. So, good job!
Since I have to avoid wheat now, I don't bake bread anymore.
