I got back home from work, so tired and hungry. I looked everywhere in my house,nothing to eat except cornflakes. Then I checked my fridge and saw some vegetables. So I decided to juggle them together and cook something, instead of just chewing them. Look, I made an unplanned fried rice.
Looks good right? I love fried rice but I cook it occasionally, let's say once in a month. However this is one food I know that I can eat daily if you give me. Haha.
My girls and hubby enjoy fried rice each time I make it. It is not commonly eaten by most homes in Nigeria. People eat more of white rice and stew, jollof rice or ofada rice, giving fried rice the third or fourth position (before or after ofada rice).
Today, I am going to show you how I made an unplanned fried rice which turns out to be delightful and sumptous.
I called it unplanned because the ingredients are not complete but I juggled around it because I didn't want to just chew the vegetables. Thank God I decided to make the rice. Haha.
COMPLETE INGREDIENTS FOR FRIED RICE
An ideal fried rice has the following ingredients
** Rice, carrots, green beans, green pepper, cow liver, chicken, vegetable oil, colouring spice eg curry or Tumeric, seasonings and salt.
THE INGREDIENTS I USED
750g of rice
250g of sliced green peas
300g of sliced carrots
200g of green beans
3 fresh red pepper 🌶️
1 medium sized onions
½ milk cup of oil
Seasonings (3 cubes of Knorr cubes)
2 tablespoons of Curry or Tumeric .
Barbequed meat
PREPARATION
Wash and slice all the vegetables. I sliced on a tray, the image of some of the sliced ingredients is shown below:
Wash the rice and put on fire. Add half teaspoons of salt to taste, add 2 tablespoons of Curry. You can use Tumeric if you have no curry. I used all these to represent chicken stock. I ought to have boiled the rice with meat broth. But I have no chicken at home as at that time.
Bring to a boil until 75% cooked.
Add groundnut oil on fire. When hot, throw in your onions, then green beans.
Add your carrots and stir
Add pepper
Add green peas.
Add seasoning.
The fried veggies are shown below.
Depending on the size of your wok, divide the veggies into two or three.
Scoup the boiled rice into a part of the fried veggies and fry.
Fried rice is ready. So yummy. I added my barbequed meat.
Tasting time with one of my kids. Haha.
