Pancakes are first aid for sudden guests, a quick breakfast, or a classic treat.

In general, I don't have much time to dedicate to preparing complicated meals, and yet I love home cooking. That's why I'm looking for a conceptual solution, a base that I can play with and adjust to my taste.
Pancakes are not complicated according to the recipe, the only problem I always face is the ratio of flour and liquid. So I end up adding flour-water-flour-water alternately until I get the right consistency (and with a ton of baking dough).
Dissatisfied with that, until I found this food blog on the internet.
The trick is not in the measures but in the way of preparing the mixture. In order for the pancakes to be silky and elastic, it is necessary to first add flour, one egg, half of the liquid, then the mixture (the dough is much thicker), then slowly add the remaining amount of liquid and whisk.
The mixture will then be of the right consistency and ready for baking (it is recommended that it stand for a few minutes before baking so that all the ingredients come together nicely)
I used to add oil to the mixture, but now I have left it out and added only a few drops while the pan is heating up.
They're still smoking.
Since these are prepared as a salty variant for breakfast, I put semi-hard cow's cheese, pepper, salt, and a little parsley in the blender for the filling. On the side, added radishes (fresh from the market this morning) and boiled chicken sausages.

1 egg
200 g of soft white wheat flour
1/2 teaspoon salt
225 ml of milk
225 ml of water
a little oil to for the pan
