When I saw the publication of this contest I did not hesitate to participate, I am a faithful lover of soup I think it is a healthy and very appetizing food that lifts the spirits and spirit to anyone, and if we talk about tradition in our country Venezuela never lacks a good soup preferably on Sundays and special dates such as December 25, January 1 and any occasion that warrants it, the soup is the perfect excuse to unite and share pleasant and enjoyable moments in family that strengthen our union, and for us the soup is synonymous with joy, family unity and love.
In our country we have a lot of variety as far as soup recipes are concerned, from the simplest ones like egg soup, chicken soup, ribs, chicken, cruzado, mondongo, grain soup, vegetable creams and so on, The soup is a national dish that can be eaten in all regions of Venezuela and can vary according to the location and the way of accompanying it, but in our family it is particularly tradition and we are lovers of the beef rib soup, without a doubt the best because the combination of the flavor of the meat together with the vegetables gives it a unique flavor that makes it the favorite soup of many and especially of my family.
I can not fail to tell you that I learned to make this soup with the best teacher she is my mother who with so much dedication from a very early age took great care for me to learn to make it and I tell you that the task was successful because I succeeded, today is one of my favorite preparations and still enjoy making it together and share it with family, accompanied by some delicious arepitas, avocado and one of our traditional drinks also the guarapo de papelon with lemon.
And now it's time to share with you my recipe for beef short rib soup which yields approximately 12 servings.

PREPARACIÓN

Wash the meat very well and cut it into pieces, once ready, place it in the pressure cooker, together with the cabbage and corn for half an hour so that the meat softens a little.
After the cooking time I turn off and remove the meat from the pressure cooker, and in a larger pot I put the same broth where I cooked the meat, put the vegetables and the compound adding more water if necessary.
I let it cook for the necessary time stirring from time to time so that the vegetables soften and add the sofrito that I previously prepared by cutting the onion, chili, chives, cilantro, garlic and all other ingredients and prepare it as follows in a pan I put oil once hot add all the chopped seasonings let it fry very well and add marinade and a little Worcestershire sauce and salt according to taste
While we finish cooking the soup I rectify the salt and in order not to lose our custom I prepare some arepas roasted with corn flour to accompany our soup as usual.
Now that our delicious BEEF RIB SOUP is ready, we prepare to serve it with our arepas, avocado cheese and our favorite drink, paprika with lemon, and we do it in a creative and nice way because the presentation of our dishes is also important.
