Avocado Eggs are more commonly enjoyed as breakfast. This time, I just want to enjoy Avocado eggs for dinner. Let me show me how to make it.
There are times when dinner becomes unexciting for me. Especially if my husband isn't at home. I'm lazy about cooking.
Usually, when my husband is around, he even feeds me so I have an appetite. 😊 You probably always see my cooking blog or I often go to cafes or restaurants. In fact, I often don't have an appetite if I'm busy engrossed in my writing project.
I like cooking, but then I share the results of my cooking with my nephew, my mother-in-law, and also my sister-in-law 😅 It's nice that I have the opportunity to share lots of food.
Well, back to the dinner topic this time. My husband hasn't come home from work yet and has told me that he ate out. So, I just have to make a dinner menu for myself.
I had an avocado that was about to over-ripe. Also, Quail Eggs. So, I had an idea to combine that. Also, I'll add potato wedges to fill me up.
Inspired by avocado eggs which use chicken eggs, I used Quail Eggs this time. In Asia, Quail Eggs are quite popular as side dishes. If you don't find Quail Eggs, you can use chicken eggs or duck eggs in general.
I think this time Quail Eggs could be the right choice because they are suitable for filling avocados. The bigger the avocado, the better it is because it can be filled with additional vegetables.
For vegetables, I used a tomato. My advice, use vegetables that have a crunchy texture. This is to avoid the texture of the eggs becoming more runny because the tomatoes will release a lot of water after the baking process. You can use boiled corn as a substitute.
THE INGREDIENTS
- a ripe avocado
- 6-10 Quail Eggs, adjusted according to the size of the avocado to fill with Quail Eggs.
- a tomato
- 1/2 teaspoon of salt
- 1/2 teaspoon of coriander powder
- 1/2 teaspoon of chili flakes
COOKING INSTRUCTIONS
STEP 1
Split the avocado and remove the seed. Make sure to split the avocado horizontally, not vertically, to get a bigger hole in the avocado.
STEP 2
Add chopped tomatoes or another type of vegetables of your choice.
STEP 3
Crack and add Quail Eggs into an avocado hole. Then, also sprinkle with all the seasoning used.
STEP 4
Bake in the oven or an air fryer for about 10-20 minutes until the eggs are cooked.
Here I use an air fryer and it takes 15 minutes to make the quick eggs perfectly cooked.
STEP 5
Prepare the potatoes while waiting for the avocado eggs to cook. Clean a potato without peeling the skin.
Then, dry the potatoes with a paper towl and cut the potatoes into wedge shapes. But you can also cut potatoes into fresh fries shapes.
STEP 6
Fry potato wedges until golden brown. Then, drain before serving.
SERVING
In fact, I need chili sauce to serve and enjoy avocado quail eggs. I think the taste is suitable 😊
Well, I was only able to finish half of the avocado. Potato wedges make me really full. So, the rest is for my husband when he gets home from work.
This dish is suitable for breakfast but with no potatoes for a healthier option and a lighter dish 😊
