Today, I made my rendition of a food we have enjoyed in my Mexican-American family with an air fryer twist.
Sweetbreads aka Mollejas may be somewhat of an acquired taste and I will admit they may not look to be all that appetizing when unprepared if one were judging solely on texture.
Don't let that fool you! They can be quite the delicious morsels when cooked properly.
Ingredients:
- Approximately 3 lbs of sweetbreads.
- 4 ounces Panko Bread Crumbs
- 2 eggs
- Salt and pepper to taste
- 2 tablespoons of ground cumin + extra to taste
1. Remove sweetbreads from packaging and drain. Bring pot with enough water to cover them to a boil.
2. Add cumin and sweetbreads to pot and cover.
3. Boil for at least 1 hour
4. Remove sweetbreads allow to drain in strainer
5. Prepare egg wash in bowl. Place bread crumbs along with salt, pepper and cumin to taste. Mix well.
6. Place Sweetbreads in egg wash, then breading, and then place on lightly greased aluminum foil sheet (optional if your air fryer uses a rack to facilitate turning).
7. Air fry on 350 °F for 4 minutes each side until golden brown.
Now, find yourself a good dipping sauce and enjoy!
