Hi hives...😎🇱🇰 are you all well.. 😄So after some time I chose foodbeehive to post my new post. So today I have brought you a bunch of eggplant... People in Sri Lanka call this eggplant moju.. You may not be familiar with this name.. So this Eggplant Moju is a very famous dish in Sri Lanka.. The reason for that is that this Eggplant Moju can be introduced as a mandatory food in traditional or other festive occasions in Sri Lanka.. So in Sri Lanka most eggplants are grown in environments with dry weather. .. Eggplant is a very common plant in Sri Lanka.. So today I am bringing you this Eggplant Moju is a food with a sweet taste and it contains a certain amount of sweetness.
So, the special quality of eggplant moju is that it helps in developing the blood circulation process of your body in a very orderly manner and through the systematic movement of blood to your brain. and eggplant can be called a very good food for your brain development.
According to the recommendations of doctors, eating eggplant daily prevents blood clots. This food can be introduced as the most beneficial food to grow brain cells.
So let's make eggplant moju...
ingredients
*Eggplant 2kg
*500g of small onions
*green chili 250g
*date palm 150g
*Mustard paste 4tbs
*Coconut oil 1l
*salt 3 or 4 tbs
*Turmeric 2 tbs
method
1 step
First of all, we wash the eggplant well with water and leave it for a while until the water escapes.

Then clean the 500g of red onion well.

Then cut the 250g of washed chillies into two.

Then wash the cleaned onions with water and leave it for a while until the water dries up.

Then we cut the eggplants washed with water thinly.
6 steps
Then add the required amount of salt and turmeric to the finely cut eggplant pieces and mix well.
7 steps
Then add onion and turmeric and fry the eggplant pieces in oil until golden.
8 steps
Then put the red onion and dates in a bowl and add to the mustard mixture and mix well.
9 steps
Add chillies to the onions mixed with date palm and mustard..
10 steps
At the end, add onion, red onion and chillies to the fried eggplants until they are golden and mix well.
