Hi folks! Due to Covid-19 pandemic, we are mostly working from home here in Belgrade. Today after work I was feeling hungry, as I had a light launch. Since it was raining outside , I felt lazy to go out and buy something eat. So I thought why not prepare some quick meal at home as I have bit free time. Whenever I plan to prepare some quick meal I can't think anything else except egg :) In Bengali culture we say Egg is the best friend of bachelor. So I prepared spicy egg curry with potatoes in Bengali style. Lets jump into the process and the required ingredients.
Ingredients
- Eggs - I used 4 pieces. You can use according to your need
- Potato
- Onion
- Garlic
- Green chili
- Turmeric powder
- Coriander powder
- Chili powder
- Cumin powder
Process
- First, wash the eggs with water and boil them for 10-12minutes with medium flame. Then remove the shell and randomly make some holes with fork or knife.
- Mix some curry powder and salt with these eggs.
- Then fry these eggs with oil for 2-4minutes till they turn into brown color and collect them on a plate.
- In the mean time chop the onions, garlic, green chili and potato as shown in the below picture.
- Fry onions, garlic and green chili with oil for few minutes.
- Then mix spices- 1/2 tea spoon turmeric powder, 1 tea spoon coriander powder, 1 tea spoon chili powder and 1/2 tea spoon cumin powder with them as shown below picture.
- Mix little bit of water while frying them with oil.
- Then add potato slices to the pan and mix them with spices.
- Cook them for 5-7minutes with medium flame.
- Then Add fried eggs to the pan.
- Cook them for another 5-7 minutes with flame until the potatoes are cooked . A slow cooked curry taste better.
I usually served them with white rice. You can serve the egg curry with bread or chapathi as well. Hope you will enjoy this dish. Let me know via comment, if you need any additional information regarding these egg curry.
