Hope you are all well today. I guess most of us are still under enhanced quarantine due to Covid-19. That makes cooking a little more challenging, don't you agree?
Since we're home almost round the clock, we tend to stay in the kitchen more. Some of us simply want to take the stress away through cooking, while some are legit hungry 24/7! LOL.
Our movements (and budget!) during this period is very limited hence we can be challenged to be more creative in cooking easy, cheap and yummy dish with just the ingredients that are readily available.
What's in my pantry?
The mighty turmeric and the consistent, chicken!
So why don't we create a fast, simple and yummy dish with these?
TURMERIC is pretty common in Asia, and is being used for cooking for its rich spicy flavor and color, and even in traditional medicine because of its numerous health benefits. Find more about its benefits here.
Today, I am sharing a very simple dish with turmeric as the star ingredient. This is very popular in my province, Batangas in the Philippines.
Adobong Manok sa Dilaw
(Chicken Adobo in Turmeric)The traditional Filipino Adobo uses soy sauce and vinegar, but this Adobo sa Dilaw uses only turmeric and vinegar as main ingredients.
Normally, we use pork for this dish, but this time, I will use chicken breast because that is what's available in my fridge and because this is what my children like. The turmeric gives the dish a yellow ("dilaw" in Tagalog) color, hence the name "Adobo sa Dilaw"
Ingredients:
- 1 large chicken breast, cut into cubes
- 3 cloves of garlic, minced
- 1 small onion, julienned
- 2 small fingers turmeric, sliced
- 1 tbsp. vinegar
- fish sauce or salt
- black pepper
- 1/4 cup water
Procedure:
- Sauté the onion, garlic, and turmeric in a pan until wilted.
- Add the meat, sauté until brown.
- Put the fish sauce or salt, and black pepper.
- Add water and bring to a low simmer for at least 15 minutes.
- Add the vinegar and let simmer for another 5 minutes.Tip! Do not mix while the vinegar is still uncooked,let the acidity evaporate.
And just like that, your Chicken Adobo is ready!
Serve with hot steamed rice, and enjoy with your loved ones. ❤️
