Pancakes.
A no-brainer breakfast idea. I used to buy pancake mix in the box, until I realized, I can make this on my own. Flour, milk, eggs, baking powder and sugar. Top with your favorite syrup, and voilà! Brekky fixed.
Over the years, I have tried several recipes - some flat, some meh, some yummy and fluffy. Now, I somehow just stick to the recipe that works for me, where I put together the tips, tricks and hacks I learned from others.
I don't have specific measurements anymore, lol. I just dump everything in a bowl and swissshhhh!
The Works - Tips, Tricks and Hacks
Here are just some of the tips and tricks that I have adapted from a few great recipes,
1. Use Sour Milk
Sour Milk or buttermilk not only gives an extra flavor to to your pancakes (or baked goods), it also gives them a fluffy and soft texture.
How do you make it?
Simply add 1 tsp of white vinegar or lemon to 1 cup of milk. Mix, and let it stand for at least 5 minutes.
2. Let your batter rest.
Try to let your batter rest for at least 20 minutes before cooking it. You know, let it might be tired from all the turning and stirring, so you have to let it rest! Lol.
Ooops, do not over mix your pancake batter. It must have that lumpy consistency so you'll achieve a fluffier pancake.
3. DO NOT PAT your pancake.
I know, I know. It is easier said than done. I used to do it too. But please, do not pat your pancake. Let it rise beautifully over low steady heat. Of course, you do not want to burn that pancake, right?
That being said, you need to watch it as it cooks. Like, "do-not-dump-that-butter-on-the-pan-and-go"!
My Fluffy Pancake Recipe
All right, now that I have shared my tips and tricks, I might as well share my recipe with you guys?
As I said, I no longer make exact measurements - I just dump the ingredients in a bowl. Thankfully, they still turn out great. Lol.
Ingredients:
- 1 cup all purpose flour
- 1 cup sour milk (prepared as above)
- 3 tsp baking powder
- 2 tbps white sugar
- 1 large egg
- 2 tbsp vegetable oil
Procedure:
Seriously? You obviously know how already. Nonetheless, here it is. Haha
- In a large bowl, mix all your dry ingredients - flour, sugar, and baking powder, and mix them together.
- Add the egg, oil and sour milk.
- Mix well enough, but the batter should be lumpy.
- Let the batter rest for at least 20 minutes
- Heat the pan. Grease with butter.
- Add the batter into the pan, around 2 tbsps each time.
- When bubbles are slowly popping on top of the batter, the it is time to flip.
- Remember TIP #3. Do not pat your pancake.
- Serve with your favorite syrup and toppings!
