My son and two of his friends are getting together to watch the Super Bowl here at the house aside from all the usual finger foods I decided to make them something sweet. And quick!
Coconut Cream Poke Cake it is!
For this recipe all you need is one already made store bought pound cake, a small can of organic coconut cream, one small can condensed milk, 1/4 cup heavy cream or evaporated milk. And the star of the show – 2 tbsps spiced rum!
Mix all the liquids together but only half of the well shaken cream of coconut can. Set aside. Poke some holes throughout the poundcake and place the loaf in a loaf pan. Pour the liquid mixture over your loaf and cover. Let it set in the fridge for at least 2 hours.
Slice, serve and enjoy!
Super easy right! i’m sure many of you have had the traditional version of this which is the Tres leches cake or three milk cake. If so, do you enjoy this type of cake?
