Full Disclosure: I obviously did not make this cookie.
This little beauty, called a Stroopwafel, is the best little treat, in my book.
It's a fine cookie, on it's own, but when you let that crunchy wafer sit atop a warm beverage and have the patience for it to get gooey on the inside, it is pure heaven.
That caramel center trickles out a little with each bite and the now-soft cookie is a delicate gift.
I only know about them because they are commercially made and carried at our local Trader Joe's but only during fall/winter holiday season. I buy a tin and savor them.
Today I ate the last one.
It was bittersweet.
But now I can carry on with my resolution to cut back on sweets.
