Today I'm going to share a recipe that is a version of "capeletti in brodo," a typical Italian recipe for a savory broth.
Capeletti, just out of curiosity, means "little hats" because of its shape. 😛
This version of the recipe is made with chicken and is not only composed of the capeletti and the broth, but also with vegetables and the chopped chicken.
The ingredients I used in the recipe were enough to prepare a serving for up to 4 people and are as follows:
- 500 grams of boneless chicken thigh
- 500 grams of chicken stuffed capeletti
- 1 carrot
- 2 onions
- 3 cloves of garlic
- 3 liters of water
- Olive oil
- Calabrian pepper
- Basil
- Oregano
- Salt
Step 1:
Peel the carrot and cut it into slices, cut the onion in half and each half divide into four parts, and cut the garlic cloves in half:
Step 2:
Put 3 tablespoons of olive oil in a pan and leave on high heat for about 2 minutes, after that put the whole chickens to seal, leave about 3/4 minutes each side
After turning the chicken season with salt (not too much), calabresa pepper and oregano
Step 3:
Add the vegetables and let it cook on low heat for about 3 minutes
Add the 3 liters of water:
Cover the pan and let it cook on low heat for about 30 minutes after it starts boiling
Step 4:
After the cooking time is up, remove all the vegetables and the chicken from the pan, leaving only the broth in the pan:

Remove the chicken skin and cut into small pieces
Step 6:
The traditional recipe for capeletti in brodo is composed only of the broth and the capeletti, and is usually made with beef.
But in this version you must return with the vegetables and the chicken in the pot, and at this point add the capelettis to cook (as directed on the capeletti package, in my case it was 5 minutes).
The time required to cook the cappelletti varies according to the directions on the cappelletti package, in my case it was 5 minutes.
After the capeletti is cooked add parsley and chives if you like.
Then our "capeletti in brodo" is ready.
Now just serve and eat.
