My idea of the ideal start to each day is something sweet. Usually that means green tea and my latest batch of chocolate. But on occasion I splurge and make a rich cake that is all natural. Thanks to a gift of fresh cherries I got creative making a decadent mousse that comes totally guilt free. Organic and plantbased. Remember the bumper crop of organic apricots we were picking and processing earlier this year? There are still bags and bags of frozen, as well as dehydrated apricots.
This yummy creation is caramelized apricot and macadamia nut. It is so rich that you can't eat a lot at a time so you won't be hogging it. However this mousse is the perfect treat or snack for growing kiddos. I always soak nuts and seeds overnight then rinse. Dates are our go to sweetener (as well as a sweet snack). To make the date jam you simply cover the depitted dates in a tiny bit of water - overnight - then blend when soft. Because the mousse includes dehydrated apricots for that intense, caramelized flavour I popped them in with the soaking dates.
CARAMALIZED APRICOT AND MACADAMIA NUT MOUSSE:
1 cup raw, unsalted Macadamia nuts
1/2 cup of fresh, chopped cherries or frozen blueberries
1/4 cup date jam
8 to 12 apricots (I did half frozen and half dehydrated)
1 frozen banana
1/2 cup organic coconut oil
dash vanilla seeds
dash of cinnamon
Except for the cherries (or blueberries) add all the ingredients to your blender. Make certain the coconut oil is melted. Blitz thoroughly until smooth. The macadamia nuts and coconut oil will make it extremely thick. Layer your mousse like a trifle with cherries (or blueberries). Refrigerate until chilled.
The BuckarooBabies had so much fun making this. It is super quick to make and a wholesome treat for the family. Despite the chilly weather this mousse is a winner in summer or winter. We put our feet in front of the fire, watched the sunrise and gobbled up our delicious mousse.
