It's summer season, it's mango season! And it's a summer Sunday. Children have holidays, it is hot outside and have to stay at home. So why not start the day with some savoury breakfast.
So today I made delicious semolina and mango pudding. Procedure is the same as ordinary halwa just some ingredients are changed. To give it a distinct taste here, I used mango pulp and coconut cream. But coconut cream is an optional can be skipped.
Ingredients (4-5 servings)
- Semolina 1 cup
- Coconut oil 1/4 cup
- Mango 1 medium to big size
- Coconut cream 1/2 cup (optional)
- Sugar 3/4 cup or according to taste.
- Dry fruits of your choice.
- Cardamom powder 1/4 tsp
- Water 2-3 cups.
Procedure
- In heavy bottom pan, roast semolina with coconut oil. Add some crushed dry fruits while roasting process.
- Roast for 10-15 minutes on low to medium flame with continuous stirring.
- Make thick paste of mango. Add no or little water while making mango pulp.
- Once semolina is roasted, add mango pulp, coconut cream and mix well.
- Now add hot water slowly with continuous stirring.
- Add sugar at this stage and cook for more 5 minutes on low flame.
- Switch off the flame, sprinkle cardamom powder and mix again.
- Serve hot and garnish with dry fruits of your choice.
