Hi all you #foodies around the world being all Masterchefy and sharing your delicious dishes with us. I hope that you're all well and here I am sharing with you another foodie 'experiment'.
So a couple of weeks ago, I cooked a sensational veggie pie @chocolatescorpi/so-i-did-an-experiment-and-ended-up-with-an-almost-vegan-pie and had a few leftover veggies cause they wouldn't fit in the pie...
Anyway, so a few days later, I was doing another experiment to make some sweet but totally healthy chocolate balls and bon bons which I posted into the #NaturalMedicine community here @chocolatescorpi/using-natural-medicine-to-create-a-very-tasty-snack-great-for-the-heart-great-for-the-wasitline-and-even-better-for-the-mental- and as I made these totally delicious little goodies, I also used the time AND the gas to use those veggies up by creating another experiment and creating these delicious savoury Vegan dinner patties.
So I started off with The Zuccinis, Eggplant, Kumera, (Sweet potato), Silverbeet (Chard/Spinach), Spanish Onions and Butternut Pumpkin,
chopped them all up and threw them into a big pot with Garlic and Lemon Pepper where they simmered away........
as I melted the chocolate in the Bowl above for my little chocolate balls at the same time- saving on Gas and time...
I knew I would neeed to thicken them up to make them into patties and the usual way to thicken foods up is to use cornflour or plain flour, but as I am trying to make these as healthy as possible, I decided to use oats instead and put a handful in with curry powder and cooked it until the oats were cooked.
the I blended the pot full of goodness into this yummy looking thick soup
rolled them into bread crumbs, pan fired them with a light spray of coconut oil
and this is how they turned out
Now I am glad that I did that experiment as they do taste great.
The only downfall is that using the oats make the mix really sticky and still didn't hold together too well so I had to be really careful turning them over in the fry pan as they were still quite 'wet' and 'sticky' but trust me, they're not going to go to waste or go to my waist. π€£
So maybe next time I use the oats but may have to dry them out a bit with cornflour, but atleast not a lot- not as much as you would usually have to use....
Anyway, there's always more experiments to come and since I'm back in lockdown again, there'l be one happening again in the next few days, just trying to decide what it will be.
I'm thinking of getting a recipe from one of Mum's old cookbooks from the 70/80's and introducing it to the 21st century by veganising and sugarfreeing it.
But then I saw this recipe earlier by @josecarrerag/peanut-butter-brownie-cookies-or-just-perfect-engesp and I got to tell you, that this might be the one too cause they look damn SENSATIONAL....AND I'm definitely going to have a go at cooking this truly healthy dish by
