A big HELLO to all the amazing people of the Hive! I hope you are all fine today. It's been raining since new year's day here in the Philippines and I pray that everyone is safe and doing well.
Anyway, today I will be sharing with you my first-time experience cooking "Pork Sisig" (sizzling pork), one of my favorite Filipino dishes. I am not a good cook but I can cook simple dishes for the family, however, I am interested in learning to cook a few recipes not just by watching them from Youtube videos but rather learn cooking by doing.
Pork Sisig is widely known as one of the most popular Filipino dishes which could be served as a main dish or an appetizer. The main ingredient of this dish is the pig's parts like minced pork meat, ears, and face (we called it here "mascara"). Onions and chili pepper (hot pepper) are also common spices.
Based on what I learned online and from my sister, I finally tried my own version of Pork Sisig🥰. There are a lot of versions of cooking this dish, especially in the ingredients and spices used but the basic ways stayed the same.
HOW TO COOK PORK SISIG (Sizzled Pork)? (This was based on how I do it😂)
- Prepare the ingredients.
1/2 kl. Pig's ears & facial skin (you can opt to use other pig's parts if you like).
Minced 4 cloves of garlic (you can add more garlic if you like it😅)
Minced 2 pcs of onions (you can also use white onions, much better🥰)
Minced 4 small pcs of hot pepper (you can use more hot pepper if you wish but I opt to use only a little because I don't like it spicy)
1 teaspoon of ground pepper and butter🧈
1 tablespoon of oyster sauce
4 Bay leaves
1 teaspoon of salt
1 small sachet of mayonnaise
2 medium-sized eggs (because I have a metal plate, one in each plate)
Prepare the Metal plate (optional)
2.Start by cleaning the pig's parts thoroughly and put to boil in a kettle, add the Bay leaves, salt, and pepper. Let it simmer until tender.
3.Once done, remove the ingredients from the kettle and drain the excess water.
4.Put oil in the frying pan and fry the boiled pig's parts until it's a crispy texture.
(Do not forget to cover it when frying for safety purposes)
5.Chop the crispy pig's ears and facial skin into fine pieces.
6.In a pan, melt the butter (use enough slice as you like). Saute the garlic then the onion (keep the onion half cooked to achieve a crunchy texture.
7.Add the fine-chopped pig's ears and facial skin. Add the minced hot pepper, ground pepper, oyster sauce, and a pinch of salt to taste. Mixed well (turn off the fire after 5 minutes).
8.Put the sizzling metal plate to heat. (You can skip this step if the sizzling plate is not available). Melt a small slice of butter and put enough amount of pork sisig on the plate.
7.Let it sizzle for one minute then put off the fire. Make a small circular space in the center of the plate where you put the egg.
8.Put it on a wooden plate. Top with a slice of lemon or calamansi. Garnish mayonnaise on top then serve hot. (Best also to put minced white onion and chopped green onion leaves if available).
Share and enjoy with your family and friends. Best with rice or as an appetizer with a cold beer😂.
