Today I wanted to appreciate a local place that makes some fantastic freshly made pasta to order!
Freshly Made Pasta
One of the really remarkable things about living in an area that has pretty strong Italian cultural roots is you get surprised sometimes when you are looking for something that's freshly made and discover a hidden gem such as this place!
My wife is on a bit of a strict diet with some of the things that she's got going on health wise that are thankfully improving incredibly, but we have to stick to what we can do as fresh and with the best ingredients possible, while also limiting it to specific types of foods that are acceptable to this situation. That means that we can't go to the grocery stores and buy the boxed but less expensive pasta and other things, which from a taste perspective is okay but from a financial perspective is a little bit of a hit lol. It's all good though, these are the things that we work for in order to be able to afford things like this in times that we certainly need them.
This place was new to us, we've never been here before and I went there the first time to give it a look and see if it was any good. I was pleasantly surprised! It was awesome how everything is so freshly made and right in front of you! You are able to choose from all kinds of different freshly made pasta doughs and they ask you some questions that seem strange at first but make a lot more sense later!
When I was ordering the pasta, I asked for a pound of their egg spaghetti and they asked "are you going to eat it tonight?" and I was at first confused.. well yeah we will be lol. I obviously looked a little lost and she picked up on it, to which she then said she just wanted to figure out how she should be packaging it so that it's stored appropriately and won't spoil. I thanked her of course and said that I'd never been here before so I apologized for the confusion. Thankfully she was nice and had a bit of a personality! Some people are so deadpan and cold these days it's a shame!
She then went over to the fridge and grabbed a pound of dough and brought it over. I was amazed at how many stacks of freshly made pasta dough they've got in the fridge! The place was packed with people considering it was fresh pasta and freshly made sandwiches. I think next time we go I'm going to try one of their sandwiches! They looked delicious lol but I was here for the pasta!
The machine here was remarkable! When we were in Italy years ago we didn't get to use something like this which makes me a little jealous! I want to look it up online to see if I can get one somehow, as I would love to have something like this from Italy so we can make our own fresh pasta lol. Making fresh pasta isn't too difficult at the end of the day but it's having the right machines in order to make it successful is what's important!
The machine takes the dough and flattens it in one of the rollers and then they can put it through one of the various settings that it's got in order to create the type of pasta they are looking to craft. In this case it was spaghetti we are going for so they popped it up top. I would love to see some of the other ones and figure out what they do! I think one of them is perhaps fusilli but it's hard to say just by looking at it like this.
The wonderful pasta comes flying down and bam! They were done in a few seconds. It was so cool to watch because when we made fresh pasta years ago in the bakery in Italy, we had to cut it in sheets with this hand roller. It completely worked out in that we achieved what we needed to and it was cool to do it by hand but when looking for efficiency like this, the machine looks like it's pretty damn cool!
They made such quick work of the whole process it was done before I could take another picture lol I'm lucky my camera snapped it as quickly as it did! They take the giant sheets of pasta over to a tray and sprinkle some corn meal on it and give it a cut in half so that you don't have 3 foot long pasta noodles lol which is appreciated!
The pasta tasted delicious! I only had a little bit since it was more for my wife and her restricted diet but I got to enjoy it a little bit! I know we will go here for special occasions where a freshly made pasta is what we would call for a celebration. We also picked up a pound of their fresh ravioli and they were phenomenal! The pasta overall was a little on the expensive side at the end of the day sadly but that's the price you have to pay sometimes to get quality stuff. We won't be able to buy this all the time but for a couple weeks it's not too bad on the wallet, if it helps keep her healthy!
