When people in the mountains have no rice, there are so many options to have sustainable foods around. Remembering my old days, we had all foods, and money was not so necessarily needed. Later on, we just need money for school only. We have free water, no electricity. Maybe we need money for salt and sugar. Even the fish, we just went to the sea for free catching fishes using bamboo. How I missed those days before.
Today, I am going to share with you how to make delicacy from cassava meat. It is called suman.
It was wrapped with banana leaves to have the perfect aroma.
We have the cassava planted by me. And we just harvested for making this delicacy.
This is the cassava plant.
We used the young roots of the plant where we can find the meat.
Ingredients:
- grated cassava meat
- sugar
- coconut meat
Procedure:
- The meat must be washed thoroughly and grated.
- Put the grated cassava into a white cloth.
- Put heavy materials or even wood and stones will do to remove the starch or liquid from the meat.
- It will be dried up a little
Set aside!
We need grated coconut for filling.
We have our coconut tree who gives us every time we need it.
- Mix the grated coconut with brown sugar and fill it in between the cassava meat before rolling in the banana leaves.
Note: the banana leaves must be boiled for a little time to gain softness before they wrap the cassava meat.
- repeat the procedure until finishing wrapping the cassava meat with sweetened coconut meat.
- File the wrapped up cassava meat in a big casserole.
- Add clean water for boiling procedures.
- leave it on fire for 1 hour or until the cooking is finished.
- try one if it already tastes good. (sometimes, cassava is poisonous.)
These are the finished products and we should keep them upward position to drain the excess water. Excess water in the leaves could shorten the length of days preservation. We have no refrigerator in the mountain.
