Are you excited about this delicious recipe about the grilled eggplant mix with fresh coconut milk?
I would like to introduce our old-time system of cooking using dried coconut branches as firewoods. This is how we utilized the falling coconut leaves when dried up. We used gas for immediate cooking but mostly we used the firewood from coconut.
They looked so cute in black colors. We cooked rice, boil water for coffee, and cooked viand, all at once, all in one burning fire. There, we grilled the eggplants.
This eggplant was our harvest from our garden. We decided to cook it with fresh coconut milk.
Procedures and Ingredients
- 5 pcs. eggplants
- 1 glass pure coconut milk
- ginger
- onions
- red bell pepper
- tomatoes
- spring onions
- salt to taste
- vinegar
- sugar
Steps:
- Grill the eggplants
- Peel off the black skin
- After grating the coconut, out a little amount of water to produce pure coconut milk.
- Separate the milk and the coconut meat. Coconut milk must be separated from the meat using a strainer.
- Mix the coconut milk with all the spices
- flattened the peeled eggplant using a fork
- Mix all the ingredients add salt and do.
- You can add a little amount of sugar
The eggplant is now ready to eat with rice. It is better to eat with camote or green banana. It cost a small amount of money since eggplant and coconut were just from the garden.
We enjoyed cooking our food today and I can't give it to my students because I was cooking it at home in the city. When I come back there.
