Hell ya it was bussin.
Tonight for dinner I decided to make Thai Coconut Curry Chicken and holy balls, it was amazing. I have been making some pretty tasty things for dinner lately, and I decided that I should start recording the recipes and stuff here on the blockchain.
I made enough for just my wife and I because our son has moved out and our daughter is usually at friend's places for dinner. But my wife and I still want to eat some nice dinners.
Ingredients
1/2 Cup Jasmine Rice
1 Lime
1 tbsp Curry Powder
1 oz Sweet Thai Chili Sauce
1 Bell Pepper
Some Cilantro
10 oz Chicken Breast
2/3 Cup Coconut Milk
Chicken Stock Concentrate
Step 1:
Combine Rice and 3/4 cup of water in a small pot. Add a pinch of salt and then heat it to a boil. Once it starts to boil, reduce heat to low and let it simmer for 15-18 minutes.
Step 2:
Wash all veggies. Deseed and core pepper then cut up the pepper into 1 inch pieces. Slice up the lime and the cilantro.
Step 3:
Dump some oil in a pan over high heat. Throw in the bell pepper with some salt and cook it for about 5 minutes while stirring it.
Step 4:
Cut chicken breast into strips and then add that to the pan with the peppers along with a pinch of salt. Cook for about 4 minutes and then add curry powder.
Step 5:
Make the sauce by adding coconut milk, chili sauce, and the chicken stock. I squeezed 3 of the lime wedges in at this point as well along with adding a bit of sugar.
Cook it for about 6 more minutes. This is where the food really starts to smell good. The coconut milk and the chili sauce really gives it an amazing smell. After a few minutes, taste it and add more salt or lime juice if needed.
The rice should be finished by now, so remove it from the heat, add the cilantro and squeeze a lime wedge into it while you fluff it up.
Now dump the food on plates and enjoy.
This meal was very easy to make and it tasted amazing. I am definitely going to be making this again. I will probably just double the whole recipe so that I can have an American serving because we are fat here in America and we like to eat too much.
I am hoping to share more recipes of food that I cook. Hopefully I will remember to take pictures throughout the whole process and not just start taking pictures halfway through.
