What I'm going to share today is the easiest and healthiest dish, perfect for weight loss. It is ready in 10 - 15 minutes and it is not so expensive either.
Ingredients:
- chicken breasts,
- frozen vegetable mix,
- salt,
- pepper,
- barbecue seasoning,
- pickles.
Method
Slice the chicken breasts or use filet, season with salt, pepper and whatever seasoning you prefer. I chose a barbecue mix as it was at hand and it is also good, perfect for the chicken.
The perfect tool for grilling would be one with charcoal, but because I don't have a garden and can't use one on my balcony, I got an electric grill which seems to be perfect so far. The best thing about it is that there's no need for extra fat and with the adjustable temperature function, you can have your grill as you like.
For this chicken breast I chose low temperature as burning the outside while leaving the inside raw is not what I was after.
For the garnish I'm usually using this kind of Mexican style mix as it's the best at a reasonable price. In the photo there's rice added too, which is not exactly for dieters, but I had some mix with rice left from last time and as I don't like to throw food away, I used it.
This vegetable mix can be cooked according to the instructions on the package, but if you don't have any instructions, just add a bit of butter or olive oil, or a little bit of both, add the frozen veggies, a little water, salt and whatever spice you like. Cover with a lid and cook for 10 - 12 minutes.
Serve while it's still hot, with pickles or fresh vegetable salad.
Chicken Breast With Cheese
Ingredients:
- chicken breast filet,
- salt,
- pepper,
- seasoning,
- herbs,
- olive oil,
- garlic,
- grated cheese.
This is another delicious dish, but definitely not for weight loss, because of the cheese. This is just a version of it, so bear with me to show you what you can do with it.
The basic idea in this case too is to have some nice chicken breast filet without too much fat.
So use a heat resistant bowl, sprinkle with a little olive oil, put in the chicken breast filet and season with salt, pepper and spices you like. Make sure you season both sides.
In this case it's good to use garlic as well as it adds some extra flavor to the meat. Slice the garlic and spread it on the meat.
Cover with the lid of the heat resistant bowl and cook for 30 minutes or so, till the chicken breast is tender. If you don't have a lid, use baking foil.
When the meat is already tender, take off the lid or the foil, sprinkle some grated cheese over the meat and put it back in the oven for another 10 - 15 minutes, till the cheese turns brownish.
If you don't like cheese or want to keep it low fat, just put the bowl back, let the meat grill a bit, till it goes brownish. The cheese is optional.
The best thing about this dish is that you can serve it without garnish as it is really good. Just have some pickles with it or fresh vegetable salad. Or you can serve with vegetable mix.
