In this situation of pandemic, low mood & mood swings are pretty common issue and one thing absolutely can cheer me up is FOOD✌️ Yes, I love food over anything else. And I got to explore a lot of different cuisine & varities actually in these two years!
Southern part of India, Karanataka state has the vibes of various regional cuisines. One of the famous & most liked food by Bangaloreans & Mysorites are Gowda style naati/country mutton/chicken delicacies. With lots of peppery hint and spices to the various dry roasts or gravy items, it stands as one of the spiciest & flavour packed cuisine.
Don't get surprised if I tell you that these food items are eaten even for breakfast by Bangalore & Mysore people! Such a heavy and spicy breakfast for sure needs a good amount of post physical work! May be this is best suited for hard manual working class people to keep their stomach filled.
Most of the delicacies in this cuisine are either Mutton/lamb or Chicken based!
Some of the most famous items in this part of culture are:
DONNE BIRYANI
Very famous style of Biryani where the rice and meat cooked together in lots of Indian spices in woodfire and then served in Donne (Cup made up of leaf).
Speciality being the rice very well cooked the juices of meat absorbing all the spices and ultimately meat gets super soft and falling off bone. Unlike any other version of Indian Biryani, this is more towards the flavoured rice pulav side!
Either Mutton/Chicken is used in here for this rice item. People often call it as NAATI STYLE PULAV(Means Country style flavoured rice)
MUTTON PAYA SOUP
One of the healthiest & most loved item by Gowda community is this Mutton leg soup. Broth is boiled with huge amount of spices, coriander with those mutton leg for hours and hours, until it leaves out all gelatinous thick fat and served with either Idlies or rice dosas.
Also it's said that this soup is super nutritious & has very good health benefits. Best for curing cold and flu too.
MUTTON DRY ROAST
Dry roast is nothing but chunks of meat roasted over heavy bottom pan with huge amount of pepper and masala items until meat gets cooked without adding water.
Mutton should be of very good quality inorder to savour this dish. Especially the Bannur Mutton variety of lamb us preferred here so as to get the melt in mouth softest chunks of mutton in each bite.
CHICKEN PEPPER DRY
Super spicy pepper and curry leaves based delicacy where in the chicken chunks are roasted with garlic chunks. Flavour packed dish with spicy hint can be served as appetizer in meals.
If you love pepper and roasted flavour, you will fall in love with this item.
CHICKEN KHEEMA GOJJU
Minced chicken or mutton meat is added to a curry paste with other vegetables and spices to prepare a gravy kinda dish to pair it up with roti/dosa/Idly.
Medium thick consistency, spicy flavours and equally spread chicken/mutton minced meat tastes amazing!
BHEJA FRY
As I had pointed out earlier, this cuisine is mostly consists of mutton/chicken in all delicacies including its various body parts.
Bheja translates to Mutton/Lamb brain. Fresh brain of mutton is sliced and coated with spicy masala and then deep fried to give crispy texture.
Super crispy outside and mushy squishy soft inside! I personally don't love this texture but many will love this preperation.
FISH FRY
Quite different spiced masala is used for coating the fish than coastal style , fried on the pan and served as side dish for meals. Not so widely used in this cuisine but often they prepare it.
CHICKEN FRY
Unlike mutton, this mostly tastes like chicken kebab or deep fried chicken in Indian spices.
Red chilly based spicy masala is coated over chicken chunks & deep fried till completely cooks and served with sides of onion slices.
Again a side dish/appetizer for any meal to enjoy!
MUTTON LIVER FRY
Liver of mutton is roasted with lots of pepper and other spices until perfectly done. Not a fan of this again, but people like it with donne Biryani as sides. Tastes quite weird to me!
