Making pasta and ravioli from scratch:
Welcome to our pasta-making tutorial! Today, we'll be making both pasta and ravioli from scratch. Let's get started!
Here is a standard recipe for pasta dough:
Ingredients:
2 cups all-purpose flour
3 large eggs
1/2 teaspoon salt
Instructions:
First, we'll make the pasta dough. In a large mixing bowl, combine 2 cups of all-purpose flour, 3 large eggs, and a pinch of salt. Mix the ingredients together until they form a shaggy dough.
Knead the dough on a floured surface for about 10 minutes, or until it becomes smooth and elastic. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.
While the dough is resting, let's make the ravioli filling. In a pan, sauté some chopped vegetables, like garlic, onion, and spinach, and some diced meat, like chicken or beef. Add some herbs and spices like parsley, salt and pepper to taste, and cook until everything is tender.
Now it's time to roll out the pasta dough. Divide the dough into 4 equal pieces and roll each piece out into a thin sheet using a rolling pin. Place spoonfuls of the ravioli filling onto one sheet of the pasta, leaving about 2 inches between each spoonful.
Carefully lay the second sheet of pasta on top of the first, pressing down around the edges of each spoonful of filling to seal the ravioli.
Cut the ravioli out using a pasta cutter or a knife. Repeat this process with the remaining dough and filling.
You can experiment with different types of flour, like semolina or whole wheat flour, and also add some herbs, spices or even pureed vegetables for more flavor. Also, for some pasta types like pappardelle or tagliatelle, you can use just eggs and flour, no salt, for different taste.
Also, you can use the pasta dough for different shapes, like fettuccine, spaghetti, or lasagna, by rolling it out to different thicknesses and cutting it into different shapes, you can also use a pasta machine to make different shapes.
Here are a few examples of different pasta sauce recipes that you can try:
Classic marinara sauce: In a large pot, sauté some diced onions and garlic in olive oil. Add canned tomatoes, a splash of red wine, and some dried herbs like basil and oregano. Simmer for about 30 minutes, then season with salt and pepper to taste.
Creamy alfredo sauce: In a pan, melt some butter and add minced garlic. Stir in some heavy cream and grated Parmesan cheese. Cook until the sauce thickens, then season with salt and pepper to taste.
Pesto sauce: In a food processor or blender, combine fresh basil leaves, pine nuts, grated Parmesan cheese, garlic, and olive oil. Pulse until smooth, then season with salt and pepper to taste.
Carbonara sauce: In a pan, cook some diced bacon or pancetta until crispy. Remove from the pan and set aside. In the same pan, add some beaten eggs and grated Parmesan cheese to the remaining bacon fat. Cook over low heat, stirring constantly, until the sauce thickens. Add the cooked bacon back to the pan, season with pepper and pour over cooked pasta.
Arrabiata sauce: In a large pot, sauté some diced onions, garlic, and red pepper flakes in olive oil. Add canned tomatoes, and simmer for about 20 minutes. Season with salt and pepper to taste.
