It's been quite a few days that I cooked something for myself as I am working too much these days. That's why I am mostly ordering foods. So, I thought lets make something new for the weekend.
I'm planning to present you a mixed-culture cuisine today. I have thorough understanding of both Bangladeshi and Serbian spices because I am a Bangladeshi working in Serbia. I'm going to make a chicken roast using a combination of chicken curry masala and vegeta. Vegeta is used in almost every dish in Serbia. Serbian people eat a lot of meat and they love roasted chicken but back home we mostly eat chicken curry as we love spicy food. Here is my recipe...
Ingredients
- 1 whole chicken 1.5 kg
- Oyster Sause 2 tablespoon
- Curry powder 2 teaspoon
- Sweet chili powder 2 teaspoon
- Dried coriander 1 tea spoon
- Cumin powder 1 tea spoon
- 5 minced garlic cloves
- Pepper teaspoon
- Honey teaspoon
Instructions
- With a sharp knife, gently poke holes into the meat all over to allow the marinade to really penetrate
- In a small plate whisk together all the spices.
- Flip the chicken over and break the breastbone so the chicken lies flat. With your fingers, gently massage the marinade into the chicken skin and meat. Try and get it under the skin as well until it is thoroughly and evenly coating the entire chicken.
- Put a foil paper on the baking tray and transfer the chicken onto the tray. Arrange the chicken so that it lays flat.
- Pre heat the oven at 200°c for 5 mins and then put they tray onto the oven and roast it for 30 minutes.
- Take out the chicken after 30 minutes and flip the side. Cook it for another 30 minutes.
- After total of 1 hour chicken will get reddish color. Take out the chicken and serve with vegetables :)
Honestly speaking I was impressed with the taste of the chicken. I must say the mixture of spices was a great idea. I will obviously make this recipe again and I hope you guys will try this with your family and let me know if you like it.
