Hello friends of Foodies! In the previous post I have told you a little about the reason why we Argentines love milanesa with puree, and today I am going to tell you about another classic of our tables: bife a la criolla, or meat in a saucepan.
Another of the recipes that reminds me a lot of my childhood is this dish, which basically consists of meat and vegetables, but it is delicious. It reminds me a lot of having dinner in winter with my family watching television and chatting, when I was a child. So my mother taught me the recipe, and today I prepared it for them, and I also took photos to share it with you!
Hola amigos de Foodies! en el post anterior les he contado un poco sobre la razon por la cual los argentinos amamos la milanesa con puré, y hoy voy a hablarles de otro clasico de nuestras mesas: bife a la criolla, o carne a la cacerola. Otra de las recetas que me recuerda mucho a mi infancia es éste plato, que consiste basicamente en carne y verduras, pero es delicioso. Me recuerda mucho a estar cenando en invierno con mi familia mirando la television y charlando, cuando era niña. Asi que mi madre me enseñó la receta, y hoy la preparé para ellos, y ademas tomé fotos para compartirla con ustedes!

My grandmother's original recipe was with boiled potatoes, but my mom modified it as she pleased and makes it with French fries, so I made them that way.
Comenzaremos adelantando un paso para tener todo listo para el final, vamos a freir papas, haremos papas fritas crujientes. La receta original de mi abuela era con papa hervida, pero mi mamá la modificó a su antojo y la hace con papas fritas, asi que yo las hice asi.
The ingredients are simple, now we will use onion and bell pepper. And those will be all the vegetables we will use! It is a cheap and easy dish. We are going to cut our vegetables in julienne respecting that they have the same thickness so that their cooking is even.
Los ingredientes son sencillos, ahora utilizaremos cebolla y morron. Y esas seran todas las verduras que utilizaremos! es un plato economico y facil. Vamos a cortar nuestras verduras en juliana respetando que tengan el mismo grosor para que su coccion sea pareja.
The original recipe was in a saucepan, but I made it in this pan that is quite deep and I can cover it, so you can use whichever you prefer. We are going to sauté the vegetables in hot oil and we are going to season them just a little so that they begin to release their juices.
La receta original era en cacerola, pero yo lo hice en ésta sarten que es bastante profunda y puedo taparlo, asi que tu puedes utilizar el que prefieras. Vamos a saltear los vegetales en aceite caliente y vamos a salpimentar apenas un poco para que estas comiencen a largar sus jugos.
My mother used to only use churrasco when she cooked this recipe, but then she started making it with different meats so it doesn't matter to me, I used peceto! the one that I had left over from the milanese from the other day :) we are going to integrate the meat and we are going to season it with salt, pepper, oregano, provenzal and a little cumin. We integrate everything very well and cover the pot. When I started to create broth we are going to integrate a splash of tomato, just a little, to give it a little flavor and thickness.
Mi madre solia utilizar unicamente churrasco cuando cocinaba ésta receta, pero luego comenzó a hacerlo con diferentes carnes asi que para mi da igual, yo utilicé peceto! el que me sobró de las milanesas del otro dia :) vamos a integrar la carne y vamos a condimentar con sal, pimienta, oregano, provenzal y un poco de comino. Integramos todo muy bien y tapamos la olla. Cuando comiencé a crear caldo vamos a integrar un chorro de tomate, solo un poco, para darle un poco de sabor y espesor.
With the steam from the vegetables and the broth, the meat will cook quickly, so just rectify the flavor and place raw eggs (I always recommend that you break them in a container and then add them to avoid accidents with rotten eggs) and add the fries that we did at the beginning, we are going to cook with a lid for about 5 minutes and then turn off the heat.
con el vapor de los vegetales y el caldo la carne se cocinará rapidamente, asi que tan solo rectifica sabor y coloca huevos crudos (recomiendo siempre que los rompas en un recipiente y luego los agregues para evitar accidentes con huevos podridos) y agregamos las papas fritas que hicimos al principio, vamos a cocer con tapa unos 5 minutos y luego apagamos el fuego.
