The Sun, the god of energy represents the orange color, fire is orange, and relates to the digestive system. As a healer i know many things about this color healing, protection, strength, courage, and emotions. connecting to creativity, enthusiasm, confidence respect. We Hindus have very special importance with the orange color in our life. For meditations, rituals, festivals, and even festive food offered to Gods. That has some meanings. Orange is warm, this color builds confidence and controls mental activities, controls emotions. and balance health and vitality, making body mind, and soul happy.
Almost our festive food includes one orange color dish or dessert. To avoid artificial colors we often use saffron to make festive food. But everybody can't afford it so use those ingredients to make it orange. For example mangoes, oranges, carrots, papaya, pumpkins, apricots, and jaggery. Mostly vegetarian way without eggs, meat, and fish. We respect the orange color as a spiritual color.
Today I made this mango Pudding to enjoy the Summer Sunday.
Ingredients:
3 Indian mangoes.
1 cup milk
1/3 cup sugar
5 tsp vegetarian custard powder
1 pinch of salt
1/8 lime juiced.
1 pinch of saffron
4 almonds chopped
4 pistachios chopped
1 mint leaf
First cleaned and cut the mangoes and took the pulp.
got 167 grams of pulp which put in a mixer added 3/4 cup milk, sugar, a pinch of salt, and made fine puree.
Here it Looked like. I was not satisfied with the color and decided to add saffron.
Ground saffron and added in the milk.
which I added to the mango mixture.
in 1/4 cup of milk added 5 tsp custard powder and made a smooth slurry. kept aside.
Now the mango mixture is poured into a nonstick pan and on the heat. and cook for around 5 minutes.
after five minutes, the heat was lowered, poured the custard slurry into it, and stirred continuously, avoiding the lumps.
the heat was medium high
When the mixture started getting thick enough to justify testing the consistency in the cup take cold water and put a few drops of the mixture in the cold water if the mixture stayed solid without dissolving in water then the mixture is ready( can see one side first mixture dissolved but the other lump stayed solid. Added few drops of lime and to pour in mold or form.
I poured the mixture into the glass block and let it cool.
meanwhile, cut some almonds and pistachios for garnish.
this was for the evening dessert after dinner. I garnished with some nuts, small pieces of mango, and one mint leaf.
That is the easiest dessert in an orange color I made this time good for the summer heat, cool, smooth melts in the mouth, delicious pleasant, and full of natural aroma and natural color.
