Hello, foodies here is my new experiment for hive's top chef theme egg yolk.
Stuffed squid.
Here we have many possibilities for different kinds of seafood including squid from local fishermen, fresh and tasty.
while cleaning this we have to be very careful to remove the ink pouch which is very small laying inside the fish.
If we miss that, the ink will spread all over and make a total mess.
Ingredients:
400 grams washed and cleaned squids here that is 21 small ones
2 eggs
2 small onions
1/2 green chili
3 cm ginger
25 cloves of garlic
1tbsp finely chopped coriander
juice from 1/2 lime
1 tbsp oil
1 tsp salt
1/2 tsp chili powder
1 tsp garam masala
2 pinches of turmeric
used 1/2 tsp salt to rub all squid pockets and heads.
minced heads finely using a knife.
In a pan heat oil.
When the oil gots hot added garlic chopped onion and green chili,
stir until onion and garlic become aromatic
added minced squid and stirred.
the squid will release a lot of water, I cooked them for a while. and added chili powder, turmeric, garam masala, and salt.
separated egg white and egg yolk.
added yolk to the squid mince mixture. I use the yolks as a thickener as well as for taste.
Added finely chopped coriander
Lime juice.
now the stuffing is ready.
This is the way I stuffed the squid.
the smaller ones I cooked in the pan on the gas, but most of them were grilled outside on a fire.
when I put them together in the skewers the camera battery ran out so I post this photo here when they are already in the outdoor fire.
here they are grilling on the outdoor fire.
The leftover egg white I just cooked in the pan along with with leftover stuffing.
