Yesterday morning, since I had a bit of free time, but actually, it's something I do every week, I wanted to prepare cookies for breakfast. I always try to make something delicious, simple, and nutritious.
I've been passionate about preparing things at home with raw ingredients for a while now because I believe it's an excellent way to both save money and have high-quality and fresh products.
For the cookies, I simply took 100g of sugar and placed it in a bowl. Then, I added two eggs and started stirring with a spatula. I also added some cocoa and a bit of baking soda to activate the leavening of the cookies. After mixing well, I added some nuts with chocolate flakes to enhance the flavor of the cookies. Finally, I added about 50 grams of butter.
Ingredients for 30 cookies:
100g sugar
50g butter
300g all-purpose flour
Some nuts/dried fruits
A teaspoon of baking soda
2 fresh eggs
After melting the butter into the dough, I added more nuts because it seemed a bit lacking and about 300g of flour. I mixed well to blend all the ingredients until the dough was workable by hand to form a very homogeneous mixture. In the end, I rolled out a thin layer of dough with a rolling pin.
With a small cup that practically served as a cookie cutter, I created all the cookies and placed them on a baking sheet. I then baked them at about 160 degrees for 10 minutes with a convection oven.
And this is the result. They might not look very appealing, but they are actually delicious. What I love most about it is that this is a very simple and quick recipe to make a large quantity of cookies for breakfast. Of course, you can put anything inside the dough, not just nuts but also perhaps small pieces of fresh fruit. It depends on taste and, as I always say, on what you have at home. This can also be considered a recycling recipe to avoid wasting anything.
