Traditional food Kerak telor (egg crust) this food is no stranger to the people of Jakarta. Historically, Kerak telor (egg crust) in the food that id most of peddled by seller in the City of Jakarta.
Not only in Jakarta,this Betawi,food has also been sold outside the City. Kerak telor food has been a round for hundreds of years,this food was created by the Betawi (Jakarta) people, and until now it is still maintained a traditional Betawi food.
I accidentally bough I kerak telor outside the City of Jakarta namely in the City of Sukabumi,West Java while looking and asking about the material used and the manufacturing process.
Kerak telor is made from soaked white gluatinous rice, duck or chicken eggs, dry roasted ebi,fried shallots, roasted coconut,kencur,pepper,grains of salt,granulated sugar.
For one saving of kerak telor*,need ingredient.
- 3 tablespoon of soaked glutinous rice
- 1 duck egg
- 1 tablespoon dried shrimp or ebi that has been soaked roasted and mashed
- 5 tablespoon of grated coconut that has been rosted and has been seasoned with spices
- 1 tablespoon of salt,seasoning and chili sauce is an option
- 1 tablespoon fried onion.
Step to make kerak telor
Step 1, heart the fire using charcoal from coconut skin, then enter the soaked glutinous rice,flatten the surface of the pan,cover breefly.
Step 2, enter a tablespoon of coconut serundeng,add salt,add ebi,seasoning,add duck egg then flatten while pressing.
Step 3, rotate with a frying pan so that it cookes evenly,if the bottom is dry and be comes crusty, after cooking then the Kerak telor is placed on a paper meal, then sprinkled with fried onions,serundeng,and then rolled up,the Kerak telor is ready to eat.
