After one-week of ordeal — Jansen started his bowel complications again since last Friday and we had been doing tubefeeding hourly for hydration monitoring — finally, yesterday he was feeling better. Phew!!! My eyes are currently black like panda and the body is asking to rest. Thank God he has started eating, albeit slowly. Gradually but surely...
After picking my niece from her kindergarten, I quickly went to buy some pork bone for boiling soup. Then, I needed to pick my son from school. Husband was at home taking care of Jansen. We ate at nearby economy mixed rice since I also needee to pack food because I knew if I were to boil soup, my body would not have extra energy to cook.
Economy Mixed Rice!
Just look at the wide selection of food choices at this stall. I am a number 1 fan of economy mixed rice, cheap and delicious and most importantly, I don't need to cook!
My lunch!
I chose fried pork with fermented branched, bittergourd with egg and fried egg. Took some potatoes from my son too, haha!
Eldest son's pick!
Eldest son chose leafy vegetables, potatoes and sausage and a fried egg. Yummy!
I packed these two packs for our dinner. Good amount of protein and vegetables. Love it!
Soup for lungs and immune system
I went home and quickly set myself to boil the soup. Always clean the meat thoroughly and then preboiled to remove the scum.
I was glad I had all the ingredients needed for the soup: soup bone, apples, wolfberries, dried fig, honey date, red dates, dried lily bulb, yu zuk and dried cordysep flowers. All these Chinese herbs help to strengthen the lungs as well as boost immunity. We all need that now!
Thank God also in time like this when I was tired, I had this soup pot from my Mum. Just set to soup setting and place all ingredients in there. Boil for two hours...

Half way through, I remember carrots good for Jansen, so I added in a bit for him.
Jansen was still getting used to drinking and eating after not doing so for 6 days, so having a soup on hand is good and timely. He loved the soup so much. I also added in some rice for him, and he had some rice and soup for dinner. Myself and eldest son ate the packed food. Husband was busy out and about, so he settled his meal outside.
