A hearty bowl of beetroot soup was what we needed during this rainy season. It warmed the body and such comfort to the soul.
We gave thanks for simple meal like this, just a bowl of soup with all healthy ingredients and a plate of rice.
Boiling the meat to remove the scum is a must. This ensure the meat is clean, also it results in a cleaner soup.
Ingredients are ready: washed and chopped carrots and beetroot, as well as rinsed dried red dates and goji berries.

Usual recipe of beetroot soup will not have these, but I love adding dried red dates and goji berries into any soup I cooked due to their health properties. Good for skin too in terms of creating that radiance.

Lastly, dried red dates and goji berries are added and set to boil for 2.5 hours.
Not sure what happened but I totally forgotten about the existence of beetroot until I saw it that day at market. Immediately, I wanted cook it. If you know me enough, you would know this gonna be a one-pot dish again. You are right!
One-pot healthy beetroot soup!
Ingredients:
- One beetroot
- Two carrots
- A handful of red dates
- A handful of goji berries
- Pork soup bones
Beetroot is full of essential nutrients, besides being a source of fiber, it contains also folate, manganese, potassium, iron, and vitamin C. Consuming beetroot promotes many health benefits, including improving our blood flow, lower down blood pressure, and therefore boost overall stamina. How I know? I asked Mr. Google. ๐
Steps to cook:
I am not even sure whether was these considered as steps because it was so simple to cook. Chinese healthy soups are generally fairly simple to cook and yet they are so healthy, hence, I really love cooking Chinese soups.
Firstly, always blanched or preboiled the meat to remove any scum, followed by rinsing them clean. That way, your soup would look clean and more presentable too.
Wash and cut the beetroot and carrots (sometimes I would add potatoes in too). Wash and rinse the red dates and goji berries.
Once all the ingredients were ready, put all ingredients into soup pot, water was added to just cover the ingredients, then set to boil for 2.5 hours. You may cut down to 2 hours but I love everything softer for the children, especially the meat, so I boiled it for 2.5hours.
Lastly, seasoned the soup with salt. And the soup was ready to be consumed. Refreshing on its own, but we loved to eat it with rice. And we loved to dip the pork meat into soy sauce, very delicious to eat with rice. Simple and hearty one-pot-soup meal.
Besides using beetroot to cook Chinese soup, we all love beetroot juice too. Veryyyyy refreshing as well.
