Last week was super challenging time for us due to Jansen's bowel obstruction and home pain management by tube-feeding hourly. However, due to desiring to save some pennies, I managed to cook two sauces for pasta dishes since my eldest son really is a fan of pasta. Of course I used the pre-made sauce due to limited time I had. I felt pity that he ate lots of pasta meals last week, but he said there were the best meal ever! So brace yourself, I will be penning down pasta meals for a few days. 🤭
Two sauces for pasta
When I needed to cook something real fast, I really thank God for all the pre-made sauce. Of course, it is not as healthy as making from scratch without any preservatives, but it is definitely life saving when you have an emergency to deal with.
1️⃣ Traditional Tomato Sauce
This is super easy to make and totally life saver. Firstly, I diced some onions and garlic. And bring them to sautée with a desirable amount of butter.
Next, I added in the chopped chicken breast and then followed by some yellow capsicum.
I continued to stir fry until all blended well and really fragrant, subsequently added in two cans of Prego traditional tomato pasta sauce.
I added in two cans because the amount of chicken meat I used was a lot. I added in some water, 1 teaspoon of sugar, few drops of Worcester sauce, some black pepper and 1 teaspoon of mushroom stock. No salt was needed because I thought the factory-made would have added in quite an amount of salt already.
The combination of the extra seasonings I added in made the sauce really flavourful and less sourish compared to the original out of the can. Yummy on its own too! I imagine this could be made as topping for pizza too.
My eldest son ate this with spagetti once and another day with macaroni, he really loved it. Unfortunately, I was not sure why I didn't take photo of the plate which I thought I did. Never mind...
2️⃣ Creamy Chicken Mushroom
After I done the tomato sauce, I moved on to cook another sauce. Since I was already at kitchen, let's get it done all the sauces once and for all before I faced the tube-feeding task.
Similarly with the same ingredients such as chicken breast and yellow capsicum, also stirred fry them in a block of butter, followed by adding in the creamy chicken mushroom soup from the can. For this, I preferred the soup version because it tasted really delicious. We preferred this than the carbonara pre-made.
After adding in, to dilute the block of soup sauce, I added a can of water, using the same can as measurement, continued to stir till became smooth and creamy.
To make it cheesy, I added in an amount mozzarella cheese. The final result yielded a really creamy cheesy chicken mushroom soup which went well with pasta! Yums!
My eldest son ate this creamy soup once with macaroni and another time with spagetti, topped with the chicken cooked by my husband. He super duper loved the pasta dishes and said he could ate pasta everyday unlike his mother who could eat rice everyday!

So yup, you could guess, after I finished cooking the two sauces above, I continued to cook two types of pasta, which were macaroni and spaghetti, one pack each.
The two sauces and two types of pasta could keep well in fridge for three days, and that was the pasta meals for my eldest son for three days. And nope, he was not sick of it. In fact, on the fourth day, when I prepared rice meal for him, he was asking for the pasta. Haha! I thank God for extra energy that I could cook these and it saved a lot of money for our last week's meal. We gave thanks for providence of food.
