I love food, as long as it doesn't have any funny smell or taste. So when I was reading the Favorite Dinner prompt by for the Ecency Discord topic for the week, nothing special popped up on my mind because we really don't have something specific for dinner. We eat pretty much any dish, mostly with rice.
When I am alone though, I would just have coffee or hot chocolate paired with sandwich from breakfast to dinner, lol! I'm often uninspired to cook because I consume less anyway and sandwich is the easiest one to make. Just poach an egg or two (or do a sunny side up), open a can of spam, slice and fry them. If there are lettuce and cucumber, I'd add them. If there's none, then I have what the husband calls a bare sandwich, with just an egg, spam and bread spread, lol! Sometimes, I just have sliced bananas on a bun or on a few slices of bread, splash a bit of sweetened milk and that's it.
This is also what I used to enjoy way back in my youth and even when I was away. Just bread with butter, sandwich or at times pasta. I'd say it's something that haven't changed over the years.
When I feel like it, I'd go for noodles, mostly the instant ones. I just boil water, soak them up, drain them after a few minutes, mix in the sauce and that's it. Usually, I would add an egg too - either sunny side up, poached or on rare occasions, hard boiled. I sometimes have noodle in soup especially when it's cold.
But when the husband is around, we would not miss rice. It's his staple food. He can't go a day without it. When we eat out, we usually have a set meal, a platter with two or three variety of food on it like this one having a piece of fried chicken, pancit, a few slices of fried or grilled pork, and of course a cup of rice.
We love pancit and it's one that we often have when eating out. We have sort of an attachment to it. This is also a dish that is mostly present in celebrations like birthdays, weddings, Christmas even, not only in ours but in most Filipino homes.
The husband has a heart for cooking and sometimes experiment on things. Like this deep-fried eggplant dipped in cornstarch that he made sometime ago. It tasted good but really greasy so he won't be making it again.
Yesterday evening, he made roasted some eggplant. He could have baked them but it takes a lot longer. And he knows I don't like greasy food so he didn't fry them. The house was smoky when he was done, lol! And for some reason, it didn't occur to me to take photos of the dish but here's how it looks while on the pan.
He then splashed the dish with soy sauce so it looked more appetizing (like below photo) when he served it. He added a few slices of ham and dinner was ready. I would say this is one dish that we both love and can have now and then.
We also love potatoes, but I don't like having them for dinner because I always feel hungry during the night, lol! I don't know, perhaps the starch on them. When we have potatoes (in any form of cooking), I observed that my stomach doesn't feel right. Below was something he made for dinner sometime ago of potatoes and fried drumstick (chicken legs).
There are other food we enjoy but like the above, they aren't anything fancy. So what's my favorite then? I couldn't choose any single one. But if there is one I can have any time of the day, it would be none other than sandwich, lol!
