That photo looks yummy, doesn't it? ...but try to resist licking your screen.... OK?? 😂
This is an easy recipe for a yummy English Toffee'ish candy. I have had the recipe for several years, so am not exactly sure where I got it, maybe Pinterest? There are many versions of it there, but I really can't remember.
I will list the recipe at the bottom of this post.
First take some Graham Crackers and lay them on a baking sheet. I used a piece of parchment underneath.
Then melt butter in a pan over medium heat and add brown sugar. Once it comes to a rolling boil, time it 1-1/2 minutes. After that, sit the pan off the burner and added in some medium chopped pecans.
Pour the butter/brown sugar/pecan mixture over the layer of crackers.
Immediately after that, sprinkle some chocolate chips evenly over the top and and let it sit a moment, which will allow the chocolate to get soft.
You could leave it just like that, but I took a metal spatula and lightly ran it across the surface, just low enough to spread the chocolate out a tiny bit, it does not need to be a solid covering of chocolate.
.... and after that, it is all over but the waiting !! It WILL take a while to become completely set. Once it is set, you can break it into whatever size pieces you like and store in an air tight container.
Yum ! Yum !
Hope you are all doing well.
Love you ! Mean it !
Jacey.
💚 English Toffee Recipe 💚
12 Graham Crackers
1 packed cup of brown sugar (I used light brown)
2 sticks of butter (1 cup)
8 ounces of chocolate chips (I used bittersweet)
1 cup chopped nuts (I used pecans)
Layer crackers on parchment lined baking sheet. Melt butter in sauce pan and add brown sugar. Bring to a rolling boil and then time it for 1-1/2 minutes. Take pan off burner and add in chopped nuts. Immediately pour over crackers as evenly as possible. Sprinkle on chocolate chips and wait a moment for chocolate to soften and then lightly spread around (if you want too). Let cool completely. It will take a while before it sets up. Then break apart to whatever size you like and store in a airtight container.
