Description:
They're roasted sweet potatoes but with the flesh scooped out and peppers sweetcorn and cheese added and then put back into the sweet potatoes. That's all Mexican sliced. Plus a dollop of lime zesty sour cream
The salad is rocket and tomatoes dressed with olive oil, salt and pepper and lime juice.
