It has been a while since I posted a food blog. This time, I will be sharing my version of a pocket sandwich! Last Saturday, I had the time to experiment with whatever we had in the fridge. I was craving something toasted. The first thing that came to my mind was bread with filling.
As I checked our pantry, we had loaf bread, corned beef, cheese, and egg. I thought to myself, "What recipe can I make out of these ingredients?" Aha! A pocket sandwich!
Ingredients:
Loaf bread
Cheese
Egg
Corned beef
Salt and pepper
Step 1:
Flatten the loaf bread with a rolling pin. If you do not have a rolling pin, you can make use of a glass. We need to flatten the bread so that it will be easier to fold them later on.
Step 2:
Slice the cheese first. Put the cheese in the center of the bread. Sprinkle salt, pepper, and rosemary, too. Do not put too much cheese because it may tear the bread. Also, we still have another ingredient to fill in. Spread some eggwash so that the bread will stick together.
I already air fryed the corned beef prior to putting them in the bread. It is to make sure that it is thoroughly cooked. Put enough corned beef so not tear the bread when frying.
Step 3:
Fold the bread carefully! Try not to tear the bread. Use a fork to seal the bread tightly. Brush the outer side with eggwash. At this point, do not be cheap with the eggwash so that when fried, it will be crispy.
Step 4:
We are ready to fry! I put to much oil here. Put the heat in medium. Carefully put the bread in the pan. Ahh~ the smell was so good! Flip the other side after 2 minutes. I want mine to be a little bit toasty so I that can feel the crunch.
When the bread is totally toasted. Put them in a kitchen towel to absorb the excess oil.
Serve!
Ahh~ I ate the bread too fast it burned my tongue, haha! The cheese did not melt the way I was expecting. The combination of toasty bread, corned beef, and cheese is oh la la ~ perfection! Also, earlier I added rosemary, so when I cut the bread, it has a woodsy aroma. It was my cheat day so I paired it with soda.
My cravings were satisfied! Indeed a fun cooking activity!
