Yesterday was Monday, we don’t have class for this day because our Institution conduct their Teacher’s Day Celebration.
I woke up early in the morning and I decided to do a jogging going to the market. It’s right timing, because we don’t have food stocks anymore at home, so I’ll just do my groceries. While looking at the snack section I am thinking what will be our snack for today.
And I decided that I would just cook “ginataang bilo-bilo” or Rice ball in coconut milk. Let's live healthy for today because junk food becomes our usual snack so I'll change it to healthy foods today.
This “bilo-bilo” or Rice balls in coconut milk has only five ingredients are needed.
Ingredients:
• Banana called “saba”
• Gabi
• “Sago” or Tapioca Pearls
• Coconut Milk
• Glutinous rice flour
• Sugar
First and foremost we need to cook the pearls in a boiling water around 10 minutes (do this step if your pearl is raw, but for me I already bought a pearl that is cooked.
Next step we will put a little water to Glutinous rice flour. Mix it very well , it should form a one missive glutinous rice or it look a dough. After forming it , the most highlighted part of cooking “ginataang bilo-bilo” or I say the most fun of all the steps in cooking.
In a big dough we will make a small little circles of glutinous rice to make a rice balls. My brother and I always compete here, we were gonna mold the rice balls in perfect circles. My brother always loses because he always does make different sizes.
After forming it to little circles we put some glutinous rice powder so will not stick together.
For the banana and gabi we will slice it into small cubes pieces .
Cooking time:
Put the coconut milk in the pot and make it boil. If it is simmering we are ready to put our cute rice balls. (do not put it at once it should be one by one so it doesn’t stick to each other)
While I am cooking an unexpected visitor came in. aunt came, she brought snacks. She cooked pancakes. The pancake was so good he stuffed it with syrup so it's very sweet and fluffy.
Going back, when the rice balls are half cooked we will put our gabi and banana. Wait it until it simmer and put the “sago” or Tapioca Pearls.
Mix it very well and taste it, if its not too sweet you can add a sugar but if it is okay you leave it their until it simmer again.
Finally you can now enjoy the “ginataang bilo-bilo” or Rice Balls in Coconut Milk. Best to served and eat it hot.
Now a days we have different variety of instant food snacks that can be eaten anytime but this snacks are unhealthy. Yes it is healthy based on its nutritional facts in packaging but for me these facts are not enough to make us healthy. It's really different when we eat direct healthy foods like "ginataang bilo- bilo".
