Kuah Beulangong is a type of curry dish and is a typical Acehnese dish. The basic ingredient is meat. The most delicious and also my favorite is mutton, although it is okay to use a variety of other meat choices, such as beef, buffalo meat, or venison. It just depends on taste.
This is a mandatory menu and the main menu for my area and this menu must always be available and prepared for important celebratory occasions; such as wedding celebrations, promotions, thanksgiving ceremonies, and even death ceremonies.
But lately, there has been a shift, this menu is increasingly being provided because it is the most sought-after menu by guests who come from outside the area, even foreign tourists who visit my place as one of the culinary tourism destinations.
In fact, it has become the only main menu even if only for small events such as gatherings with old friends.
Like last weekend, some of my old friends agreed to get together for a weekend night and asked me to be the impromptu chef of this favorite menu.
Since I'm the chef, I took the time to take some photos of the dishes and I'm happy to share them with you all.
If at certain celebrations or ceremonies, always use meat from whole farm animals, but for small events, it is enough to only provide one kilo or two kilos of meat, depending on how many people will enjoy it.

Curry leaves
Curry leaves that have been twigs removed and washed
Grated coconut
Grated coconut is ground so it is not too rough
Ingredients:
- 2 kg of young goat meat
- young jackfruit
- 1 coconut that is not too old and grated
- 250 grams of red onion, chopped
- 50 grams of garlic, chopped
- 3 cinnamon sticks, about the size of an adult finger
- 15 sprigs of curry leaves
- 2 ounces of cooking oil
- Salt to taste
Ground spices:
- 2 ounces of dry red chili
- 2 ounces of red chili
- 1-ounce cayenne pepper
- 50 grams of garlic
- 50 grams of hazelnut
- 50 grams of ginger
- 50 grams of turmeric
- 1-ounce coriander
- 2 grains of nutmeg
- 1 tablespoon cardamom
- 1 tablespoon cloves
- 200 grams of roasted coconut
How to cook:
Step 1. Wash the meat, then cut it to the desired size
Step 2. Wash the young jackfruit and cut it to the desired size
Step 3. Puree all the spices by grinding using a blender
(Unfortunately I didn't have time to take a picture of the grinding process of all the ground spices, because my friend was doing it in my kitchen at home. It's really nice to be able to share tasks together)
Step 4. Prepare a frying pan/ cooking skillet that is adjusted in size and add the chopped meat
Step 5. Sprinkle all the ground spices over the meat, stir gently, and add a little water until evenly mixed
Step 6. Let stand for 20-30 minutes so that the spices seep into the meat
Step 7. Prepare another smaller skillet, pour cooking oil, and heat it
Step 8. Saute the chopped shallots until half cooked, remove and sprinkle into a pan with meat that has been mixed with spices
Step 9. Fry the curry leaves that have been cleaned from the stems until wilted and sprinkle them into a skillet filled with meat that has been mixed with spices
Step 10. Saute the chopped garlic until completely cooked, then drain until completely dry from the oil. This fried garlic is to be sprinkled at the end, to get an appetizing smell.
Step 11. Add enough water and salt to a pot of meat that has been mixed with spices and cinnamon
Step 12. Cook all ingredients over medium heat until the meat is half tender. You have to control it carefully to know the level of doneness of the meat.
Step 13. When the meat is almost tender, add more water according to the desired amount of sauce and add all the pieces of young jackfruit
Step 14. Continue cooking while stirring and adjusting the taste. If the meat is really tender and the taste is to your liking
Step 15. Turn off the heat and sprinkle the fried garlic on top of the dish
Finally, Kuah Beulangong is ready to eat and serve while hot.
Preparing this Kuah Beulangong dish is not too difficult and does not require special skills, the cooking method is also very simple, even though the ingredients used look a lot and the cooking process looks long.
