Hello friends, today I bring you a recipe from my mom that I really like. I made a chicken soup with rice. This is really something that I really like and it brings back good memories of my childhood, my mom used to prepare it for lunch on Sundays. Since I moved I really wanted to prepare this recipe, so I want to try to make it as close as possible to how my mom used to make it.
The ingredients we will use will be oil, salt, onoto and curry. Obviously we will also use rice and some chicken. The good thing about this preparation is that it is made with very few ingredients, but they all provide a great amount of flavor and color.
First we chop the chicken into small pieces and put it to fry in our pot with the oil, onoto, salt and our curry. Stir until our chicken is cooked for a few minutes. The oil and the onoto will give it a lot of color and with the heat the curry will impregnate the chicken with a lot of flavor. After cooking our chicken we add a cup of rice and mix well until all the ingredients are incorporated.
Then we add the water (normally to make rice I use double the amount of water depending on the rice, in this case as we will make an soup we will add more water than usual. Here I used 8 cups of water for 1 cup of rice) and also add a little salt.
Let's wait for the water to boil and while we drink a coffee 😅. Yes, I am a coffee lover, it is very good to cool down😂
As an extra we chop an onion and a few cloves of garlic, this will give a good flavor to our broth. The original recipe does not have onion or garlic, but I discovered that this combination greatly enhances the flavor of the broth. If you want to add another ingredient (such as coriander or whatever you like) you can also do it, but I like it with garlic and onion, just don't let it cook too much, I recommend adding it as soon as the grain of rice opens, do not let the onion and garlic cook for more than 5 minutes.
Also (optional) we can add a little chicken broth, personally I like to add it just for this type of recipes and it really gives a good taste. if you don't like chicken broth concentrate you can also add MSG, which does the same thing.
We mix everything until integrated and let it boil for about two more minutes. And we turn off, lower our pot from the stove and let it rest for a maximum of 10 minutes, because if we let it rest for longer the rice can absorb all the broth, this is a dish that is eaten warm. At this point you can correct the salt and pepper (if you want) but to tell the truth if you do it following this recipe I don't think you need to add more.
