One of the quickest and easiest bakes certainly is a Scone; basic pantry staples and some fresh cream is all that's required for a teatime treat fit for a king or a queen!
Life's been really hectic...not in the fast lane...but still hectic!
Being retired but running our own BnB keeps me real busy as there's quite a bit of admin to take care of, telephone calls at all hours of the day...and night, with the strangest of requests at times! Some of the guests order meals, so that adds to the work load.
To add to all of that, I've been nursing Mom Lily following her fractured ankle, but she is slowly starting to get mobile again, with assistance of course!
Another project that's been keeping me very busy as well, has been a brand new community for anyone over the age of forty called Silver Bloggers.
Hope to see you there one of these days;)
Back to the kitchen, the cookie tins were empty, all I've had for a couple of weeks now is store bought cookies, and I totally wanted a homebaked treat just in time for tea.
Bran Scones to the rescue!
The Recipe
- 3 cups Self-raising Flour (or add 3 heaped tsps baking powder to regular cake flour if no self-raising)
- 1/4 tsp Salt
- 3 Tbsp Brown Sugar
- 1/2 cup Bran flakes
- 125 gram Butter, melted
- 400ml Milk
- 1 Egg, beaten
Beat liquids together & pour into dry ingredients, mix lightly till soft dough is formed.
Pat dough onto a bran sprinkled surface, cut into circles with cookie cutter.
Bake at 190°C for 15 min.
Cool a little on wire cake rack before cutting in half.
Serve with Strawberry Jam & whipped Cream.
Savoury version - top with sliced Onion, Chili Jam, Sliced Tomato & grated Cheddar Cheese.
Pop under grill to melt cheese.
Sweet or Savoury?
