Life's been tough for many since last year, not only financially but also with food stores closing earlier and often running out of fresh goods.
I'm not sure about you, but there have been a good couple of times when I've searched the pantry to throw together a quick meal using canned goods, especially when there was no time to go to the food stores!
These meals surprisingly are always really delicious!
Spicy Lentil, Butter beans & Baked beans Curry in a Hurry
I will briefly tell you the basic how-to, but remember you can adjust it and replace it with any other beans or legumes that you may have.
- 1 can Butter Beans, drained
- 1 Can Lentils, drain half the liquid off (mine had tomato puree & brine, but it's equally good with Lentils in plain brine)
- 1 can Baked Beans
- 1 Onion - diced
- 2 Tomatoes - diced
- Garlic cloves - crushed
- Fresh Ginger root - grated
- 1 tsp Cumin/ Jeera Seeds
- 2 tsp Turmeric
- 1 heaped Tbsp Wet leaf Masala
- Curry leaves
- 1 stick Cassia or Cinnamon bark
- Star Anise
Sautee seeds, onions & garlic in a little oil
Add tomatoes, ginger & remaining spices, cook till tomatoes soften
Add beans & lentils and simmer for approx 5 min
Serve on rice, rotis or on its own with homemade bread for dipping.
Fishcakes from cans
Same story here, you can use any canned fish you find in your pantry, just remember to drain it well
- 2 cans Middlecut Fish, drained
- 1 Onion - diced
- 2 Spring Onions - diced
- Handful fresh Parsley - diced
- 2-3 small-medium Potatoes - diced, cooked & mashed
- 1/2 cup Self Raising Flour
- 1 Egg
- 1 cup Rolled Oats
Mix all except the oats together, season to taste
Form into balls, roll in oats & fry is shallow Oil on both sides
Serve with creamy mashed Potatoes & Peas
Tuna Noodles
Canned Salmon or any other smoked canned Fish will be even tastier, but I used what I had in the pantry following riots in our city recently where we could not buy any food for a couple of days.
- 2 cups Noodles, cook in salted water till al dente
- 2 cans Tuna - drained
- 1 Onion - diced
- 2 Spring Onions - diced
- 2-3 Tomatoes - diced
- Fresh Basil - chopped
- 1 cup grated Cheese
Sautee onion & spring onions in a little oil
Add tomatoes & basil, season to taste
Add tuna and toss with noodles
Sprinkle cheese on top of noodles once dished up
All of these are quick and easy and real budget beaters, easily made with everyday pantry staples.
