Greetings food lovers,
It's another fun food recipe to share that surely your kids would love to have.
I always like to experiment with food that my kids would love to eat and at the same time very economical and nutritious.
So I'm sharing with you today another glutinous rice flour recipe with freshly picked young coconut for a refreshing delight and of course their favourite "cheese".
Heres the ingredients I used
- 500 grams glutinous rice flour
- 2 cups water
- 1/2 cup sugar
- 1/4 cup sesame seeds (toasted)
- 1 fresh grated young coconut
- 1 tbsp ube flavouring
- cheese
The procedure is quite a hustle but it's fine because the outcome is so rewarding.
Procedure
- I gradually mix two cups of water with the 500 grams of glutinous rice flour and knead.
- Divide them into two equal portions and add ube flavourings in one part.
- knead again the purple mixture to combine perfectly. I let it rest while I prepare the other ingredients.
- While resting the dough. I prepared the sesame seeds, toast until golden brown set aside to cool down and I slice the cheese for the filling and grated the coconut slowly because I use the too young coconut.
Now it's time for assembling
- I scoop one part of the plain mixture and one scoop of the ube mixture. I made them into balls first so it's easy for me to assemble the two mixtures.
- I get each mixture and rolled them into a ball
- flattened them with your palm just right that the cheese would fit in
- fill the cheese and roll again and shape them into the same size. (as you can see in the picture below)
Cooking procedure
- Boil water before adding the rice rolls.
- Cook. (you will know that they are cooked already when it floats. let it stay for a second and remove from water) let it drip for another second.
- Now time to roll over them to the grated young coconut one by one. (Note to roll them right away or else they're gonna stick to each other)
To make it easier to pick and to look attractive I use a banana leaf as a wrap.
Finally, it's ready to enjoy, remember that we don't put sugar while cooking so time to use the sugar and roasted sesame seeds, combined and sprinkle or dip as sweet as everyone as they like.
Here is my finished dessert. My apology I forget to take a photo inside the dessert but to tell you its cheese adds a more delectable taste to our glutinous rice rolls that my kids and family enjoyed snacking.
