Hopefully, everyone is doing well. For today I wanted to share again one of my homemade recipes.
Nowadays everything in the market is increasing drastically, so most people now are strategizing how we can save on everyday needs and I am one of them. As much as I can, I actually grow vegetables in the yard to lessen the cost of buying them. One of the things I also tried was to raise batres chickens. From the time they are still chicks when we bought them from the market, we feed them until a few weeks or a month before they can be slaughtered to be used for various dishes to consume.
Therefore for today's recipe, I want to share how we use one of our chickens for viand. At first, I let hubby do the job of preparing the chicken and after that, I took over preparing the recipe to roast the chicken.
While hubby is working on the chicken I went to my garden to look for useful species and I got this fresh lemongrass, lemon basil, and spring onions which I love adding when it comes to roasted dishes.
Besides the spices I got from the garden, I also used onion, garlic, salt, pepper, oyster sauce, and my favorite seasoning granules. After cutting the spices and knotting the lemongrass, I stuff them one by one inside the chicken and lastly seasoned it and skewered it with a bamboo pole to start the roasting.
Anyway, for the skin, I brushed a bit of soy sauce on it that I was not able to mention above. In addition to that we used the primitive way of cooking since we do not have an oven at home, we used leftover coconut shells to roast the chicken.
After Cooking slowly for an hour here is the finished dish.
The taste was just right and the aroma was so great that tells me that I should prepare extra rice 😁.
The size of the chicken we are raising is good, so the roasted one we had some leftovers for the next meal. Truly, it's really better if we produce our food because apart from saving money it feels more satisfying.
