Hello food lovers,
again for another food recipe.
Today's recipe is all about dried fish or sun-dried fish or even my American uncle calls it a stinky fish as he runs out of the house when my aunt his wife cook it for her meal.
Its a method of preserving fish to remove water to inhibit the growth of microorganisms and makes the food stays longer.
Most of the people that live in the mountain areas would use this type of preservation because of being far from the market and sometimes buy them in bulk to save money and food as the day passed by. We can cook dry fish in many ways, you can fry them and can be an ingredient to other dishes and the most popular for us Cebuano is to grill them and pair them with coconut wine vinegar with a lot of chillies.
Heres another delicious way how to cook dried fish that will you want for more rice
My Sweet and Salty dried fish
Ingredients
- dry fish.
- tomatoes
- long chillies
- onion
- ginger
- garlic
- black pepper
- sugar
- seasoning
- Oil (for fry and saute)
Preparation
Dry fish is mostly supper salty so if that is the case you can rinse them longer to remove the salt. But for my recipe, it's sweet and salty so I just wash it to clean and drain the water before frying.
Meanwhile, I prepare the spices for making our sweet and salty condiments.
Cooking procedure
Step1 Fry the dry fish. Set aside after.
Step2 In another pan saute the spices and seasoned with my favourite seasoning (magic sarap), pepper and brown sugar.
Step3 saute tomatoes until condensed, add long chillies and followed by the fried dry fish. Cook for 1 minute and remove from pan.

you can add more and more tomatoes if you like, and I just love them with too many tomatoes but these days tomatoes and other vegetables are mostly pricy so will just stay in budget for now 😁.
