Here's another set of Philippine dishes our family serves on special occasions.
A pleasant day to all. Another uncle of ours just recently celebrated his birthday a while ago, and we had an extended family dinner in their humble home. The food served was cooked by his daughter, who is a great cook. I've been inviting her to join hive so she could share her specialties and other things. Anyway, here's a list of simple cuisines yet mouthwatering and satisfying.
Igado
Kickstarting the list, we have Igado here. It has been featured in one of my previous posts, so I won't talk about it much this time. Nevertheless, it is always present in such celebrations in our family. Be it birthdays, feasts, or graduation. It may look paler as compared to other recipes of others, but this one's the best for me.

Asadong Manok
As I saw it a while ago, I thought of it as adobong manok but more reddish. It was clarified that it's actually Chicken Asado when I asked. The ingredients include chicken cut into serving sizes marinated in soy sauce and citrus juice for more flavors, butter, potatoes, tomato sauce, soy sauce and other condiments to taste. It's perfect to partner with white rice and blends well with other dishes.
Pinakbet
This dish packed with various nutrients is comprised of various veggies such as eggplant, bitter melon, squash, string beans, ladies' fingers (okra), cabbage, ginger and bagnet for the Iloko variation. However, due to the small budget, pork was used instead of the bagnet. It's one of my favorites as well because of the variety of veggies incorporated in it. You may also want extra rice with this dish.
Adobong Okra
Lately, I shared adobong manok recipe. This time, another adobo variation is here. It's adobong okra which is just easy to cook. You just also need two main ingredients, which is the okra or ladies' fingers and soy sauce. Pork is optional, but it would make it tastier if you added it to the ingredients list. If you haven't tasted it yet, I would recommend trying it soon.
Maja Blanca
This sweet dessert for the sweet tooth is made with coconut milk, sweet corn, evaporated milk and/or condensed milk, and cornstarch. Not only is it sweet but also delicious. It is also topped with grated cheese, making it cheesy and tasty.
Simple Coconut Milk Cake
At first, I thought it was a simple banana cake, but it's actually made up of coconut milk, which was also used in making the Maja I mentioned prior to this. We do not have an oven, so I am really amazed at how resourceful my cousin is. It tastes good and sweet.
